I happened upon the recipe for this sauce as I was looking for something new to make with a Mexican flair. These Chicken Avocado Enchiladas did the trick and satisfied the hungry dinner guests.
The creamy avocado sauce is so scrumptious and has just a little heat with the addition of the jalapeno to the puree. Turn the spicy up with another jalapeno or even a habanero pepper. Don’t like the spice, simply leave the peppers out for a smooth and creamy, but still flavorful sauce.
Prepare these ahead of time and just pop them in the oven just before you are ready to serve them!
