Shrimp tacos! After a long day at work, that was all I could think about on the way home! I stopped by the grocery store and picked up just a few ingredients I didn’t have, then had to get my workout in before dinner, so I wanted something that was fairly quick to prepare.
I was looking for something with a little crunch, something creamy, and something spicy. The red cabbage, avocado and the chipotle crema hit all the right spots. I used 2 chipotle peppers in the crema and it was a bit too spicy. If you like your Shrimp tacos a bit spicier, simply add two or more of the peppers in your crema!
