I woke up this morning in the mood for some soup. I recently used leeks in another recipe and found that I really enjoyed their mild but sweet flavor.
I tossed the leeks in place of onions in this potato soup and was really happy with the results. This loaded potato soup was smooth and creamy and the cheese and bacon on top just makes this dish.
This makes for a great lunch dish or an appetizer for a dinner party!
