Potato Salad, perfect for any picnic.
This past holiday weekend was a great opportunity to try a new recipe with the anticipation of family and friends coming over for a holiday weekend outdoor picnic. The weather was beautiful and everyone raved about my potato salad!
The last few times I’ve cooked potato salad, I cooked the potatoes too long and they were a little mushy. It’s hard to know when to remove them from the stove, because even if you run them under cold water and throw in some ice cubes, they still tend to cook further than I want.
This recipe solves that problem by eliminating the boiling process and actually baking the taters in the oven!
