It was a chilly Saturday afternoon and I was in the mood for something warm and full of flavor. Instead of make a traditional soup, I thought it might be a great day for some Ramen.
Looking through my pantry to make my Shiitake Sweet Potato Ramen, I realized I was lacking the Sweet Potato. 🙁 After a little digging I found some shrimp and some bacon in the fridge that could make a nice flavor filled Ramen.
The bacon adds a nice smoky flavor and the earthiness of the mushrooms in this dish that was perfect with the shrimp and noodles!
